Recipes: Chanterelle mushroom cakes with kaffir lime leaves

Warm starter : Ingredients

  • - Serves 4
  • - Preparation 25 minutes
  • - Cooking 40 minutes
  • - 1 1/2 pounds (600 g) chanterelle mushrooms
  • - 3 eggs
  • - juice of lemon
  • - garlic clove, grated
  • - 1 small bunch of chives
  • - kaffir lime leaves
    (or 1 stalk of lemongrass if neither is avalaible substitute 1 tablespoon curry powder)
  • - 3/4 cup (8 oz, 200 g) crème fraîche
  • - 2 tablespoon walnut oil
  • - 1 tablespoon sherry vinegar
  • - salt, freshly ground pepper

Preparation of the recipe

1/ Prehaeat the oven 350'F (180' C).

2/ Cut the lime leaves in half (or split the stalk of lemongrass).
Clean and wash the chanterelle. Sweat them in a covered pan over low heat.
When their moisture is almost completely evaporated, add the crème fraîche, garlic, and lime leaves (or lemongrass).
Reduce for 10 minutes.
Season with salt and pepper.
Remove the lime leaves.

3/ Put the chanterelles in a blender, add the lemon juice, and blend to a smooth puree.
Break the eggs and add to the blender.
Blend for another 10 seconds
Put this mixture in small over molds (the size of a crème caramel mold). and bake for 30 minutes.

4/ Prepare a vinaigrette with the walnut oil and sherry vinegar.
Chop the chives.
Put the vinaigrette and chives on the flans and serve immediately.

Chef's comments Kaffir lime leaves or lemongrass add an astonishing fresh flavor. These cakes are a fine first course during the mushroom season.

(Note of the translator : If you cannot get chanterelles, use a brown mushroom).
